Easy Quiche Recipe
A quiche is basically an omelette pie. It's made with or without a crust in a pie dish. This easy quiche recipe has a crust, but it can be made just as easily without one. If making a crustless quiche, just put the rest of the ingredients in a pie pan and bake. A crustless quiche has fewer calories and less fat than a regular quiche, so the crustless version can double as a lower calorie meal.
This recipe makes one quiche with crust, baked in a 9-inch pie pan.
Ingredients:
- 1 pre-made pie crust, available in the refrigerator section of the grocery store
- 3 Eggs
- 1 Cup shredded cheese, sharp cheddar is a good choice but any cheese will do
- 1 Cup milk
- Fillings: add anything on hand; caramelized onions, chopped deli ham, spinach, sliced tomato, or cooked broccoli will all work well
- Salt and pepper to taste
Method:
- Line a 9 or 10-inch pie plate with one pre-made crust. Pre-bake the pie crust according to the directions on the package. Most pie crusts are baked at 450 degrees F for 9 to 11 minutes. Pre-baking is not necessary, but can prevent a soggy center crust.
- Mix together the eggs and milk. Add salt and pepper. Prepare fillings. In this case, chop a few slices of ham and slice a tomato.
- Remove the crust and reduce heat to 375 degrees F.
- Layer ham, tomato, and cheese into crust. Pour egg and milk mixture on top.
- Return to oven, bake for 30-40 minutes or until the edges are firm and the center has just a hint of movement when shaken. The quiche will continue to cook until served. For a firmer quiche, cook until the entire dish is puffed and solid.
- Let cool slightly and serve.
Tips:
- When baking the crust, cover with foil and fill with dried (uncooked) beans to prevent the crust from puffing up during baking.
- If the edges of the crust brown before the quiche is done, place foil over the crust to prevent further browning.
- Make sure any fillings you put in the quiche are drained completely, especially cooked spinach. Squeeze out any liquid or squeeze between paper towels, otherwise the moisture will make the quiche soggy and watery.
